Délestage according Ganimede®

USE OF TECHNICAL GASES: DÉLESTAGE AND
OXIGENATION OF THE MUST

The oxygenation of the liquid mass recommended by the Montpellier ICV protocol concerning the délestage technique, with Ganimede® can take place, at the discretion of the winemaker, using a controlled and scientific approach by injecting O2 through the appropriate valve for the injection of technical gases.

Only in this fashion, the injected gas will remain trapped in the cavity in contact with the liquid in an adequate quantity and for the required time, according to accurate procedures pre-set by the winemaker.

Starting from the important studies conducted by Montpellier ICV on the délestage technique, Ganimede®re-proposes this technology in a controlled and healthy environment without need to remove the liquid mass and, thus, without using pumps or other mechanical elements.

The entire operation can be set AUTOMATICALLY through a control panel and repeated from 3 to 12 times a day, with minimal use of personnel!

Ganimede® , thanks to its natural turbulence system, allows replacing with more frequency the liquid inside the grape marc cap's skins, thereby facilitating the quicker and selective extraction of just the noble substances.

The same turbulence allows the fall by gravity of the grape seeds collected at the bottom of the fermenter, where they can be easily extracted and excluded from the extraction processes, or, if the grape seeds are ripe, they can be easily returned to the process.

In addition, Ganimede® allows a scientific and not empirical method for the oxygenation of the mass; this stage is entrusted to the winemaker's skills and not to indiscriminate exposure to the external environment.
